Ingredients
  

  • 2 tsp instant coffee powder or espresso powder
  • 2 tbsp hot water
  • 1 cup heavy cream chilled
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 1/4 cup milk
  • A pinch of salt

Instructions
 

  • Dissolve Coffee:
    Dissolve the instant coffee powder in the hot water. Set aside to cool.
    Prepare the Cream Base:
    In a saucepan, combine the egg yolks, sugar, milk, and a pinch of salt. Cook over low heat, stirring constantly, until the mixture thickens slightly (about 5–7 minutes). Do not boil.

  • Combine Coffee:
    Remove the saucepan from heat and stir in the dissolved coffee and vanilla extract. Let the mixture cool to room temperature.
    Whip the Cream:
    In a mixing bowl, whip the chilled heavy cream using an electric mixer until soft peaks form. Reserve 1/4 cup for garnish, if desired.

  • Fold Together:
    Gently fold the coffee mixture into the whipped cream using a silicone spatula. Avoid overmixing to keep the mousse light and airy.

  • Chill:
    Divide the mousse into serving glasses or bowls. Cover and refrigerate for at least 2 hours to set.
    Serve:
    Top with whipped cream, chocolate shavings, or a dusting of cocoa powder before serving.
